ORIGINAL ADOBO RECIPE

INGREDIENTS

  • 2pcs chopped onions
  • 1head chopped garlic
  • 1 and 1/2Kilo chopped chicken
  • 1/2tsp salt and ground black pepper
  • 3-4Tbsp soy sauce (silver swan)
  • 2pcs dried bay leaves
  • 1/2tsp whole peppercorn
  • 3-4Tbsp vinegar (cane vinegar)

DIRECTIONS: 

Saute chopped onions on high flame for 30 seconds. Add chopped garlic and saute for another 15 seconds. Add 1 1/2 kilo chicken or your choice of meat and continue to saute on high flame setting. Add salt and pepper. Mix thoroughly and continue to saute on high flame setting and let fat render. Once rendered, add soy sauc, reduce on high flame setting. Add hot water, and mix thoroughly. Add bay leaves, whole pepper corn and set aside.  Prepare adobo sauce,  add cooking oil on pan on low flame setting. and add meat. After 8 minutes, add adobo sauce back into the pan until reduced. Add a litlle bit of water and 3-4 tsb vinegar. Reduce sauce and and it's ready to serve.
